10 little Scott things…V.6…part 2

6.  I started putting up our Christmas decorations this past weekend…we are going to get our tree this weekend!!!

This was after Thanksgiving lunch…real baby and food baby in one
8. We had a family get together with my dad’s brothers and sisters this past weekend.  It was fun and I got to meet my new cousin…Isabella.  She is so cute and sweet…hopefully our little bebe will be just as sweet.

9. I made apple pancakes for my mom and me on Thanksgiving morning.  It was delicious…it was more like a custard than a pancake, but that was fine with me.  I just love custard!

1/4 cup butter
2 lg. apples cored and sliced into 1/4 inch wide wedges
1/2 cup milk
1/2 cup flour
4 large eggs (or 5 large egg whites)
3 Tablespoons granulated sugar
1/2 t. vanilla
1/4 t. salt 

powdered sugar
 ovenproof dish

Preheat oven to 450 degrees. Melt butter in skillet, and add apple wedges to skillet and cook lightly turning once until apples begin to soften (3-5 minutes). While apples are cooking, add remaining butter (melted), milk, flour, eggs, granulated sugar, vanilla, and salt and mix. Pour butter batter mix over apples and transfer skillet to oven. Bake until pancake is puffed and golden, about 25-30 minutes. Remove from oven and dust with powdered sugar. Serve immediately

10. I also made chocolate chip pancakes…
These things might be the best thing I have ever put into my mouth…I mean really!!!  You need to make these as soon as possible…you will thank me!

enough for 2-3 people

1 eggs
1 cups flour
2 tablespoons sugar
1 teaspoons baking powder
0.5 teaspoon baking soda
0.5 teaspoon salt
1 cups buttermilk
2 tablespoons butter, melted and cooled
½ teaspoons vanilla extract
1/2 cup milk chocolate chips
cooking spray (for cooking)
Step 1: In a large bowl beat eggs. Add buttermilk, butter and vanilla and mix well. Add flour, sugar, baking powder, baking soda, and salt. Mix well until mostly smooth. Fold in chocolate chips and let batter set for a few minutes.
Step 2: Heat griddle or pan over medium heat. Add a teaspoon of oil to the pan or spray with cooking spray. 
Step 3: Pour 2 Tablespoons of batter onto the griddle. Cook on the first side until bubbles that form start to pop. You can also gently lift up the pancake to make sure the bottom is not overcooking, if it is the pan may be too hot and you will need to adjust the heat. Flip the pancake over with a spatula and cook until golden brown. Repeat until all the batter is gone. Let cooked pancakes rest on a heat proof plate in a 200 degree F oven until ready to serve.

I want to make these again today!!!!

sometimes I dwell on the little things in life that are not so great
but I remind myself of how lucky I actually have it…
I am so lucky to have such a supportive family
they really are the best
my parents have always supported my dreams
and been there for me even if they did not really think my decisions were the best at the time
I know that I can call them at anytime about anything
I am so lucky to have a wonderful mom, dad, and brother
I am so lucky to have he perfect man to be my husband
I use to dream when I was a little girl about my husband
and now Andre meets everyone of those dreams
he is truly the perfect person for me
he understands me more than anyone
I am so lucky to be able to spend my life with such a special person
I am so lucky to have such a beautiful place to call home
even though I wish somethings were different
this is our home and we love it
I am so lucky to have friends that are there for me
I could not imagine life with out these girls
each one of them hold a special part of my heart!
I am so lucky to have a job
that I really love…I might add
an engineering job is not the easiest job to come by 
and I have a good one with a great organization!
I am truly one lucky girl
and I don’t need to forget it!!!

Mom’s DAY

Happy Mother’s Day
to the most wonderful Mom in the books!

My mom and I are so close!
We have talked on the phone everyday since I left home (to go to college)
if not multiple times a day! We have such a fun time together! We are best of friends now 🙂
I love that she is there for me always
and one of my biggest supporters!

I can not wait to become a mom one day,
but for right now I am just thankful for my wonderful mama!
God could not have given me a more wonderful person to call my MOM!!!

Davis Family Get-together

Today all of my Dad’s side of the family got together.  One of his sisters lives in San Francisco and is not in SC very often so what a perfect time for a get together.   It was so much fun getting to visit with all of my aunts, uncles, and cousins!
